Butternut Squash Soup
This simple soup will keep you warm all winter!

Ingredients
- 1/4 cup butter
- 1 medium onion
- 9 cups chicken broth
- 5 lbs or 15 cups butternut squash peeled and chopped into 1” cubes
- 2 medium apples grated
- ½ cup maple syrup
- 1 ½ cup 35% cream
- salt pepper to taste
Instructions
- In a large pot, melt butter over medium heat
- Add onions and sauté until translucent
- Add broth, squash, apples, salt and pepper and bring to a boil
- Cover, lower heat and simmer for 30 minutes or until squash is tender
- Remove from heat and blend with immersion blender until smooth (or in small batches using a regular blender)
- Stir in maple syrup and cream and heat on low to warm throughout
- Taste and adjust seasoning accordingly

This recipe makes a large batch, enough for about 14 servings!
