Butternut Squash Soup

This simple soup will keep you warm all winter!

  • 1/4 cup butter
  • 1 medium onion
  • 9 cups chicken broth
  • 5 lbs or 15 cups butternut squash peeled and chopped into 1” cubes
  • 2 medium apples grated
  • ½ cup maple syrup
  • 1 ½ cup 35% cream
  • salt pepper to taste


  • In a large pot, melt butter over medium heat
  • Add onions and sauté until translucent
  • Add broth, squash, apples, salt and pepper and bring to a boil
  • Cover, lower heat and simmer for 30 minutes or until squash is tender
  • Remove from heat and blend with immersion blender until smooth (or in small batches using a regular blender)
  • Stir in maple syrup and cream and heat on low to warm throughout
  • Taste and adjust seasoning accordingly


This recipe makes a large batch, enough for about 14 servings!
