Butternut Squash Soup
This simple soup will keep you warm all winter!

or 15 cups butternut squash
peeled and chopped into 1” cubes
pepper to taste
In a large pot, melt butter over medium heat
Add onions and sauté until translucent
Add broth, squash, apples, salt and pepper and bring to a boil
Cover, lower heat and simmer for 30 minutes or until squash is tender
Remove from heat and blend with immersion blender until smooth (or in small batches using a regular blender)
Stir in maple syrup and cream and heat on low to warm throughout
Taste and adjust seasoning accordingly
This recipe makes a large batch, enough for about 14 servings!
